Zucchini and Cauliflower Patties recipe by Natures Trinity
Serves 2. Approximately 15 Patties.
Directions for Zucchini and Cauliflower Patties:
Ingredients:
- One cup of fine semolina
- A pinch of Himalayan Pink Salt
- Four sprinklings of mixed herbs
- Two replacement eggs
- Cauliflower
- Zucchini
- Extra Virgin Olive Oil
- Water
Method:
Add one cup of semolina into a mixing bowl.
Add a pinch of salt into the bowl.
Mix two teaspoons of replacement egg powder with four tablespoons of water in a standard cup. Stir both the powder and water together until it becomes a thick consistency.
Add more water slowly until it becomes easier to stir. Add this into the semolina to make the batter.
Insert four sprinklings of mixed herbs into the batter and mix thoroughly.
Grate a large floret of cauliflower on the fine holes on the grater. The movement allows for grating both ways (up and down).
Grate half a large zucchini with the skin on only on the large oblong holes.
Mix all the ingredients.
Cooking:
Use a non-stick frypan and pour just enough oil to cover the base. Place fry pan on medium heat and use a tablespoon to scoop out the mixture and place into the frypan gently. Use a spatula to flatten the patties whilst cooking for the first seal, and this will display by the underside browning, turn over to cook on the opposite side.
