Directions for Tasty Vegetables and Rice Combination:

Ingredients:

  • Tasty Vegetables and RiceBasmati Rice
  • Extra Virgin Olive Oil
  • Water
  • Frozen Winter Vegetables – Includes carrots, beans, broccoli and cauliflower.
  • Frozen Peas
  • Brown Skinned Onion
  • Cauliflower
  • Cabbage
  • Cucumber
  • Mushrooms
  • Red and Yellow or both Capsicums
  • Tomato
  • Vegetable Stock Powder

Prepare the rice first:

One cup of Basmati rice to two cups of water, momentarily while the rice is cooking stir to get it off the bottom. When the rice boils, maintain this process until the rice absorbs the water. When it reaches a semi-dry consistency, please take off the heat and allow it to evaporate further.

Second:

You will need a non-stick pan to fry the vegetables lightly. In a zig-zag motion pour in some extra virgin olive oil mix with water to cover the base of the fry-pan.

Add a quarter of the frozen mixed vegetables and peas to the fry-pan.

Slice the brown onion through the skin it will protect your eyes from the vapor separate it into rings, and place evenly into the fry-pan. Remove the outer brown layer and discard it.

Use some raw cauliflower by placing six florets into the fry-pan.

Raw cabbage finely slice six segments, separate it and add to the fry-pan.

Cucumber – if it is large, only use a quarter and dice and spread evenly into the fry-pan.

Mushrooms: Approximately four thinly sliced mushrooms, add to fry-pan evenly.

Red and Yellow or both capsicums: Cut two sides from either or both capsicums, diced finely.

Tomato: One tomato sliced thinly and spread evenly across the fry-pan.

Stock Powder Vegetable: I use a brand called Massel, its ingredients I do not have an allergic reaction. I have been using this brand for years. It’s up to you which brand you use and how much stock you put in to make it tasty.

If at some stage the vegetable mixture starts to dry out, add more water, not too much just enough to keep the vegetables from burning.

Rice:

  1. Empty the rice into the fry-pan and spread evenly.
  2. Start tossing from the bottom up and mix both the rice, vegetables and vegetable stock powder.
  3. Check the water level in the pan to ensure that the mixture is not dry.
