Crumbed Zucchini Fritters
Crumbed Zucchini Fritters recipe by Natures Trinity
Directions for Crumbed Zucchini Fritters:
Ingredients:
- Two large Zucchinis
- Two large cloves of Garlic
- Half a cup of Semolina
- Two Egg replacements
- Crushed Peppercorns
- Bread Crumbs
- Extra Virgin Olive Oil
Method:
Grate Zucchinis with the skin on the large oblong holes and add all other ingredients to a large mixing bowl.
Remove the outer skin of the Garlic cloves and grate on the smaller oblong holes.
Add half a cup of semolina.
Add two egg replacements, see directions on the egg replacers’ packet.
Add a couple of turns on the peppercorn crusher above the mixture.
Combine this mixture thoroughly.
Use a tablespoon to scoop the mixture and place onto the cutting board to cover in breadcrumbs before placing it into the frypan.
To the non-stick frypan add extra virgin olive oil covering the base.
Lower the heat when cooking these patties.
The golden colour underneath the fritters will indicate to turn these over to cook on the opposite side.
