(Serves 2.)
Ingredients:
Mixed Salad Leafs
Baby Spinach Leafs
Butter oak lettuce leafs
Half a large Carrot
Brown Onion
Garlic
Cherry Tomatoes
Continental Cucumber
One Avocado
Dressing:
One Tablespoon of Extra Virgin Olive Oil
One Teaspoon of Bragg`s Apple Cider Vinegar
A pinch of Himalayan Pink Salt
Half a teaspoon of raw sugar
Squeeze a quarter size of a Yellow Grapefruit
Combine this liquid thoroughly before pouring it into the Salad Mix
Make this salad dressing for two people.
Method:
In two mixing bowls, divide the salad evenly.
Add half the carrot grated on the large oblong holes to each bowl. Remove the skin from the onion and cut it in half. Cut both halves into smaller pieces and share each half between the two bowls.
Large clove of garlic, remove the outer skin and grate on the small holes of the grater. Spread garlic evenly across each of the salad bowls.
Finely slice two cherry tomatoes into each bowl.
Continental cucumber: remove the plastic wrap from the part of the cucumber you use. Grate a quarter of the amount for each bowl on the large oblong holes of the grater.
Cut the avocado in half. Remove the seed. Slice the avocado flesh into thin strips for both halves and add it to each bowl. Discard the skin.
I hope you enjoy this salad and dressing as much as we do.
(Another way of using salad mix and roasted vegetables)
To the very best of health!
