(Single Serve).
Ingredients:
Two Baby Potatoes
One large clove of garlic
Half a brown-skinned onion
Add extra virgin olive oil covering the base of a
non-stick frypan
Method:
Pour the extra virgin olive oil into the non-stick fry pan, covering the base of the frypan.
Grate the baby potatoes with the skin on the large oblong holes on the grater.
Add half of the roughly chopped onion and finely diced garlic to the grated potatoes.
Add the grated potatoes, roughly chopped onions and finely diced garlic into the frypan.
Cook the contents on moderate heat until the underside appears golden in colour. Turn it over to cook the opposite side.
