Raw Beetroot Dip

Raw Beetroot DipRaw Beetroot Dip

 

Ingredients:

  • One large carrot
  • One small whole avocado
  • One small whole onion
  • A quarter of raw beetroot
  • Half a sweet lemon

 

Method:

  • Grate the carrot on the tiny holes on the grater.
  • Remove the skin from the onion and dice finely.
  • Remove the skin and seed from the avocado and spoon the flesh into the other ingredients.
  • Leave the skin on the beetroot and grate on the tiny holes of the grater.
  • Squeeze half the juice from the sweet lemon.
  • Add a pinch of pink Himalayan salt.
  • Thoroughly mix all the ingredients

 

There are another two varieties of this recipe.

Option number one: Leave the avocado out.

Option number two:  Use a tiny amount of the raw beetroot.

The lemon juice used in options one and two was a bitter lemon.
