KHOBZ (5 pieces) is a whole meal pita which I use to make two tasty large pizzas.

  • A tablespoon and a half of tomato paste on each of the pita bread spread evenly across the base.
  • Pre-heat oven and set it to 180C, leave it on until you are ready to use it.
  • To the frypan add cold water and a tablespoon of extra virgin olive oil just covering the base.
  • Add approximately a quarter of the packet of frozen mixed winter vegetables consisting of green beans, baby carrots, broccoli and cauliflower to a non-stick frypan—no need to thaw out first. Cook on high heat until the majority of the water has evaporated.
  • Add the following raw vegetables, remove the skins where applicable and place into the frypan.
  • One brown onion, skin removed, slice and separate into rings.
  • Six sliced mushrooms.
  • Six slices of each red or yellow capsicums or both and dice
  • Six slices of zucchinis and cut these into halves.
  • Six slices of cucumber and cut into halves.
  • Three sweet and sour cucumbers finely sliced.

 

Use as many of the pitted Kalamata olives as you like or leave out. Saute the vegetables as mentioned above until tender. Scoop out vegetables with a small amount of leftover juice from the frying pan by using a serving spoon to spread evenly across the pizza base. If there is no juice that is okay. Place the two pizzas into the oven for about two minutes for the bread to crisp.

Do not stress if you don’t have some of the ingredients; leave it out.

 

Remember a little goes a long way.

PS If you make a single pizza reduce the number of ingredients.
