Mixed Vegetables and Chickpea Dip

 

One cup of frozen mixed vegetables consisting of the following;

Ingredients:

  • green beans
  • baby carrots
  • broccoli
  • cauliflower

A 400 gram of chickpeas, rinse under running water until the water becomes clear. Pour chickpeas with one cup of frozen mixed vegetables into a blender or food processor to form a paste. If the blender gets too hard to blend, add a small amount of water.

Method:

  • When completed, spoon out the paste from the blender and add it into a mixing bowl.
  • Add a cup and a half of Almond meal (crushed almonds) to the mixing bowl.
  • Add a small whole avocado, discard the seed and skin.
  • A quarter of fresh zucchini, do not remove the skin. Grate on the large oblong holes.
  • Half a sizeable brown-skinned onion remove the skin and dice finely.
  • Two large cloves of garlic, remove the skin and grate on the smaller holes on the grater and add.
  • Add the juice of half a lemon.
  • Add two tablespoons of Japanese style soy sauce.
  • Combine all the ingredients mentioned above.
