Mini Vegetable Cakes Recipe (Makes 33)
Mini Vegetable Cakes Recipe by Natures Trinity
Vegetables:
- 2 Medium Potatoes
- 6 Cauliflower Florets
- 1 Baby Carrot
- 1 Zucchini
- 1 Clove of Garlic
- 1 Purple Onion
Other:
A pinch of Pink or Celtic Salt
2 Tablespoons of plain flour or Fine Grained Semolina
2 Egg Replacements follow directions on the packet
A quarter cup of Extra Virgin Olive Oil for Basting
Method to follow in this Vegetable Mini Cake Recipe:
Do not remove the skins from the Potatoes, Carrot and Zucchini, remove the skins from the Garlic and onion. Break off the 6 florets from the cauliflower.
Grate all on the small oblong holes on the grater, this mixture will be watery as some of the vegetables will release their water content. Add this to a mixing bowl, include the plain flour, and egg replacement, combine thoroughly.
First oil the base of a pikelet pan by using a basting brush, place a teaspoon of the mixture into the pan, and flatten evenly by using the back of the teaspoon. Baste the top of each cakes surface with a little oil so it can be turned over when the bottom of the cake is cooked.
