Lentil Sushi Rice Dish Recipe by Natures Trinity

Ingredients:

(Serves 3)

  • One Cup of Sushi Rice
  • Two cups of water
  • One 400 gram can of Lentils
  • A sprinkling of Himalayan Pink Salt
  • One large brown Onion
  • Three cloves of Garlic
  • Two Tablespoons or more of Extra Virgin Olive Oil
  • One and a half of Vegetable Stock Cubes

 

Method:

  1. Pour the rice directly into a pot and add two cups of water, plus add a pinch of Himalayan pink salt.
  2. Bring the rice to the first boil and lower the heat, simmer the rice until the water is nearly absorbed.
  3. Keep stirring the rice until it is too hard to stir and is nearly dry.
  4. Turn the heat off and remove the rice for further evaporation.
  5. While the rice is cooling off, prepare the Lentils by rinsing thoroughly until the water becomes clear, place in a large
    pot ready for mixing. Add the warmed rice to the lentils and mix.
  6. In a large non stick frypan add two tablespoons of extra virgin olive oil, one large diced brown onion, and three finely diced garlic.
  7. Fry until both the onion and garlic are cooked. Add some water for top up and add the Lentil and Rice mix to the frypan.
  8. Thinly slice the one and a half stock cubes and place in the fry pan evenly so it will be a good coverage for the rice and lentils.
  9. Mix all of these ingredients together and then take off the heat and serve.
