Potato Salad Recipe by Natures Trinity
Ingredients:
(Serves 2)
- Seven Medium Cooked Potatoes
- One Red and One Yellow Sliced Capsicum
- Half a Baby Carrot
- One Red Onion
- One Teaspoon of Himalayan Pink Salt
- Two Tablespoons of Extra Virgin Olive Oil
- A small bunch of Parsley
Method:
Potatoes can be cooked with the skin on or off, in this recipe I cooked the potatoes without the skin. When the potatoes have cooled cut it into desirable bite size pieces. Potatoes cooked with the skin on need to be cooled and then peeled, doing it this way more nutrients remain. Potatoes peeled before cooking lose many of the nutrients which lie beneath the skin and using a vegetable peeler the skin and some of the potato is removed.
Add the following RAW ingredients into the potatoes:
- Combine the red and yellow capsicum slices and dice finely.
- Grate half a baby carrot on the smallest holes on the grater.
- Dice the red onion finely.
- Sprinkle a teaspoon of Himalayan pink salt evenly.
- Pour two tablespoons of Extra Virgin Olive Oil or more if desirable.
- Add a finely diced small bunch of parsley.
- Gently combine these ingredients into the potatoes.
