Dark Chocolate Yummy Date Balls
Makes 30 Date Balls
Ingredients:
- One cup of pitted dates
- One cup of Almond Meal
- One tbsp of smooth peanut butter
- Three tbsp of Organic Coconut oil
- One Medium block of Dark Cooking Chocolate
- OR Three tbsp of Good Quality Cocoa Powder
- One tbsp of Canadian Pure Maple Syrup
- Two Tsp of Ground Cinnamon
- One cup or more of Fine Desiccated Coconut
- One small fresh Banana, remove skin
Method:
- Finely chop the dates eliminating any seeds left behind in the processing. Use a fork to smash the Banana.
- Place all the above ingredients mentioned into a mixing bowl except for the chocolate. Melt the chocolate in a pan on low heat, include the coconut oil if solidified and melt together.
- Stir the chocolate and the coconut oil until fully dissolved; take off the heat and allow to cool momentarily.
- Pour the heated, melted content into the mixing bowl and mix all the other ingredients mentioned above.
- Pour a cup of Desiccated Coconut or more onto a cutting board or any area of choice to cover each Date Ball according to the desired size,
- For this recipe, I used a teaspoon to make approximately thirty balls. Using a teaspo
- on, I drop the mixture directly into the coconut layer and shape it to the size I want.
- When shaping the content into balls, you may need water to rinse your hands from the coconut and chocolate.
- Place all finished balls in a prominent place and refrigerate for an hour until set.
Remember, before you start, remove any hand jewellery.
