Curried Vegetables Patties
(Makes 10 Curried Vegetable Pasties)
Ingredients:
- 500gram packet of Mixed Frozen Vegetables.
It consists of the following vegetables.
- Carrots
- Peas
- Corn
- Beans
- Cauliflower
Add Fresh vegetables;
- Six slices of red capsicum and dice.
- One brown-skinned onion, remove the skin, slice and separate into rings.
- Four sliced cherry tomatoes, add the slices across the colander.
- A quarter of Zucchini, leave the skin on and dice.
- Add one and a half tablespoons of curry,
- whether mild, medium or hot, your choice in strength.
- While the vegetables are steaming, add the curry of choice to the steaming vegetables and do not mix yet.
- When the vegetables have reached the desired tenderness, mix in the curry powder thoroughly using tongs to turn the vegetables in the colander.
- Take off the heat to cool off.
Method:
- Remove five sheets of frozen puff pastry, separate and place on a flat surface for thawing.
- When thawed, cut the sheet in half, and place a tablespoon or two of the cooled food on each sheet.
- Enclose the food by lifting the end of the sheet closest to you over the cooled ingredients and seal it with your fingertips.
- Seal the other end by bringing it over to the other side of the sheet and using the fork prongs to form a pattern around the edges.
- Place baking paper on each tray before placing the raw pasties.
- Preheat the oven for 10 minutes at 190C and cook for 35 minutes or until golden.
