Zucchini Black Bean Dip recipe contributed to Natures Trinity
Zucchini Black Bean Dip
Ingredients:
- 400 grams of Black beans
- One small Zucchini
- One tablespoon of Tahini ( ground sesame seed}
- One tablespoon of extra virgin olive oil
- One small brown-skinned onion
- One medium-size garlic clove
- One teaspoon of mild curry powder
- Juice of half a lemon
- A quarter of a teaspoon of sweet paprika
- Five twists or more from the whole black peppercorns grinder.
Method:
- Pour the black beans into a colander and rinse under running water until the water becomes clear. Place the beans into a mixing bowl.
- Without removing the skin from the zucchini, grate on the large oblong holes on the grater.
- Add a tablespoon of each ingredient mentioned below;
- Tahini paste
- Extra virgin olive oil
- One small brown-skinned onion, remove the skin and finely dice.
- One medium-size garlic clove, remove the outer skin and finely dice or grate on the small holes of the grater.
- One teaspoon of mild curry powder.
- Squeeze half the juice from a lemon.
- A quarter teaspoon of sweet paprika.
- Whole black peppercorns grind to five or more twists of the grinder.
- Combine all these ingredients in a food processor until smooth.
