Sloshie Roast
Ingredients:
- Three teaspoons Garlic Granules.
- Three tomatoes, cut into small pieces.
- One tablespoon of mild curry.
- Two Red Capsicums cut into smaller pieces.
- One medium sweet potato is peeled and cut into small pieces.
- One teaspoon turmeric.
- Three brown-skinned onions, remove the skins and cut them into small pieces.
- Three potatoes, peel and cut into small pieces.
- Three pumpkin slices remove the skin and seeds; and cut into small pieces.
- Three medium-sized carrots, if prewashed, cut into small pieces remove any green trimming
Method:
- Place all the above ingredients into a baking tray and spread evenly across.
- Add a sprinkling of mixed herbs across onto the ingredients in the tray.
- Add one teaspoon and sprinkle the Himalayan pink salt to the mixed vegetables.
- Pour extra virgin olive oil over the vegetables.
- Insert the vegetables into a pre-heated range at 10 minutes for 200 celsius.
- Cook for 35 minutes. Return to the oven and turn over the vegetables. Reset the timer for a further 35 minutes until cooked through
