Silverbeet Patties recipe by Natures Trinity
Silverbeet Patties
Ingredients:
- Two cups of semolina
- Two small red-skinned potatoes
- Three large silverbeet leaves and stems.
- One brown-skinned onion
- Two Vegan easy powdered eggs for cooking
- Half a teaspoon of pink salt
- Three cups of water
- Extra virgin olive oil
Preparation:
- Add two cups of semolina and three cups of water to form a batter to the mixing bowl. If not enough water, add a little more.
- Add half a teaspoon of pink salt to the batter.
- Rinse the stalks and leaves of the silverbeet.
- Cut the stalks and remove the tough strings by using a vegetable peeler.
- Finely dice the stalks and leaves and place them into the semolina.
- Add two teaspoons of vegan easy egg powder to a teacup.
- Four tablespoons of water to the egg powder and stir until it thickens.
- When it becomes too hard to mix, add a little more water until it forms a paste.
- Pour this paste into the semolina.
- Peel the skins from the potatoes and onion
- Finely dice the onion and grate the potatoes on the smaller holes on the grater.
- Thoroughly mix all the ingredients in the semolina.
Method:
- To a non-stick frypan, add enough extra virgin olive oil by covering the frypan base, and cook on medium heat.
- Scoop out the mixture with a tablespoon and place it gently into the oil.
- Press lightly with the back of the tablespoon to seal one side.
- When the bottom of the pattie turns golden, turn it over by using a spatula and cook the opposite side.
- Repeat this method for the remainder of the patties.
- It should give you roughly twenty-five patties.
