Mixed Vegetables Soup with Pumpkin and Garlic Toast
Mixed Vegetables Soup with Pumpkin and Garlic Toast recipe by : Natures Trinity
(Serves 2}
Mixed Vegetables Soup Ingredients:
- A medium slice of Butternut and Kent pumpkins. (skins removed).
- Add a quarter of a packet of Frozen Mixed Winter Vegetables, consisting of Green Beans. Baby Carrots, Broccoli and Cauliflower.
- Include one and half of a Vegetable Stock Cube, dissolved in the hot soup and stir.
- Add all the vegetables as mentioned above to a two-litre pot of water. Bring to the boil and cook until tender.
Garlic Toast
- Toast two slices of bread and add a peeled clove of garlic by rubbing the clove along each surface. Garlic will reduce in size because the toast acts as a grater.
