Homestyle Vegan Pizza

Homestyle Vegan Pizza

Serves 2

Ingredients:

  • Two Lebanese Wholemeal Pita slices of bread, (Each packet contains five pizza bases).
  • Pizza tomato sauce.
  • 500 grams of mixed frozen vegetables.
  • One whole Yellow and Green capsicum.
  • One large brown-skinned onion.
  • A sprinkling of Italian mixed herbs.
  • Two Massel Vegetable Stock Cubes.
  • Pre-heat the oven for ten minutes at 200C

 

Preparation:

  1. Place the two Pizza bases on round baking trays and add the tomato sauce on the Pita bread by spreading it evenly with a knife ensuring good coverage.
  2. Pour the mixed frozen vegetables into a colander and steam vegetables. Break up the stock cubes and spread them evenly.
  3. When the frozen vegetables have reached tenderness, stir to ensure the flavours are evenly spread.
  4. Roughly chop the large onion and the yellow and green capsicums, remove the seeds and skin where applicable and add them to the frozen vegetables.
  5. Select half each of the two Pizzas when the vegetables have cooled off. Spread the warmed vegetables evenly across the base of the two pizzas trays.
  6. Place the pizza trays into the pre-heated oven and leave the heat at 200C for another 10 to 15 minutes.
