Coconut Ice

Ingredients:

400mls of premium coconut cream
400mls of water
A cup of pitted dates
Two tbsps of organic cocoa nibs
A teaspoon of pure Canadian maple syrup
A teaspoon of premium vanilla extract
Two cups of extra water

Method:

Pour the pitted dates into a saucepan and add two cups of water.
Bring the pitted dates to a boil; press them to a thick consistency using a potato masher
while it is boiling, and allow the water to reduce, leaving a little water.
Turn off the heat and set it aside to cool off,

In the meantime, select another container and place the following ingredients.

Premium cocoa powder
Two cups of water
A teaspoon of pure Canadian maple syrup
A teaspoon of Premium vanilla extract
Add the warmed, syrupy pitted dates to the mix
Stir the mixture by hand and pour it into a blender to mix it thoroughly. The pitted dates
will change the colour of the mixture to a milky light brown
Blend it for a couple of seconds on high and pour this liquid directly into a
six-centimetre approximate height container to be frozen.
Add two tablespoons of the Organic Cacao Nibs and stir it by hand before placing it to be frozen.
Check it after four and a half hours to see whether it has set hard.
