Cauliflower, Potatoes and Zucchini Patties

This Cauliflower, Potatoes and Zucchini Patties recipe makes 19 patties.

Cauliflower Potatoes and Zucchini PattiesCauliflower, Potatoes and Zucchini Patties Ingredients:

  • One Zucchini
  • Two Potatoes
  • Six florets of Cauliflower
  • Two egg replacements (follow directions on the packet)
  • One teaspoon of Turmeric
  • One teaspoon of Salt
  • A quarter teaspoon of Coriander
  • A quarter teaspoon of Paprika
  • Two tablespoons of continental flour (fine semolina)
  • Three large cloves of finely grated Garlic
  • Extra virgin olive oil

Method

Leave the skin on for the Zucchini and Potatoes. Grate both of these vegetables including the florets of the Cauliflower on the large elongated holes on the grater.

Finely grate Garlic on the smaller elongated holes on the grater and place into a mixing bowl.

Add the following into the mixing bowl, Turmeric, Salt, ground Coriander, Paprika, Semolina and replacement Eggs.

Form patties by scooping out a mixture using a tablespoon. Shallow fry in olive oil on medium heat.

When the pattie shows, it has turned golden underneath flatten momentarily and turn it over by cooking the other side.

Include a handful of pre-packaged Super Leaf blend.

It may contain shredded carrot and beet, coral lettuce, spinach, iceberg lettuce or make your selection.

Dressing:

  • Freshly squeezed juice of one Lemon
  • One tablespoon of extra virgin olive oil
  • One teaspoon of raw Sugar
  • Half a teaspoon of Salt

Mix all the ingredients, pour over salad and toss.
